INGREDIENTS:
- 2-3 slices of bacon diced and browned
- 1 onion chopped
- 2 bay leaves
- 5-6 Juniper Berries (NOT from juniperus virginiana)
- 1 apple, cored and chopped
- 1 jar of Sauerkraut
- 1+ cup of white wine (optional)
- 1+ cup of apple juice (optional)
DIRECTIONS:
Brown the onions after the bacon has been cooked into crunchy pieces, add the remaining items, add water or wine or apple juice and cook until done, about 30-45 minutes, stirring occasionally. If you like a sweeter kraut, rinse it before cooking. I usually let most of the liquid cook away until the kraut is almost dry.
