Lisa Thompson’s Zucchini Bread

ZUCCHINI BREAD (1 loaf)

Ingredients:

1-1/8 cup sugar
1-1/2 tsp vanilla
2 eggs
1/2  cup Wesson oil  (I use Canola occasionally)
1-1/2 cup plain flour
1/2 – 1 cup pecans
1/2  tsp soda
1/8 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
1 cup grated zucchini (peeled)

Directions:

Combine all ingredients in order. Bake in greased & floured loaf pan for 55-60 minutes at 325°. Cool 10 minutes then remove from pan.

Makes 1 loaf. To freeze, wrap in aluminum foil.
